Violeta Chacón

Postdoctoral Fellow


Dr. Chacón is a Postdoctoral Research Associate at the UConn Rudd Center for Food Policy and Health. She is interested in studying how nutrition policies and interventions can improve children’s diets. Her research describes the school food environment and evaluates potential warning label policies to reduce sugar-sweetened beverage consumption among adolescents in Guatemala. Her PhD dissertation work aimed to identify and understand psychosocial factors that influence parents’ food choices in the US during the COVID-19 pandemic. Dr. Chacón completed her dietetic internship at the Francisco Marroquín University, in Guatemala City. She holds a Master’s in Food and Nutrition from the University of Chile and a PhD in Food and Nutrition Policy and Programs from the Friedman School of Nutrition Science and Policy at Tufts University.
