Faculty and Staff: Maria J. Romo-Palafox, PhD, RD
Dr. Maria Romo-Palafox is a Postdoctoral Fellow with the Rudd Center for Food Policy and Obesity at the University of Connecticut.
Dr. Romo-Palafox received her B.S. in Nutrition and Food sciences from the Universidad Iberoamericana in Mexico City, where she also underwent her training as a Registered Dietitian. In 2015 she earned her Ph.D. in Nutritional Sciences from the University of Texas at Austin. She studied the dietary quality of parent-packed lunches sent to Early Care and Education centers, the factors that influence parental packing behaviors and the consumption patterns of preschool children during lunch.
After earning her Ph.D., she worked as a Postdoctoral Fellow at the Michael and Susan Dell Center for Healthy Living with the University of Texas Health Science Center at Houston, Austin Regional Campus where she worked with SPAN, a Texas statewide obesity surveillance system.
Dr. Romo-Palafox's current research with the Rudd Center for Food Policy and obesity will be focused on marketing and nutrition, with an emphasis on health disparities and the dietary quality of foods advertised children, and parents of children, teenagers and adults.
